Kheer is referred to milk based sweet dish in India, there are a variety of Kheers in Indian cuisine like, Rice kheer, Vermicelli Kheer, Sago Kheer and many more. Today, I'm sharing with you a very simple sweet dish which is an authentic recipe from Goa
Goa is one of the states on coastal region of India also known as Konkan region, and is famous for Fish recipes. People have a misconception that Goans eat only fish for every meal but that's not true, their cuisine has some delicious vegetarian recipes like Lentil curry, Moongachi gati, Potato fritters and Cabbage dry and so on
One of the common plantation in Goa is coconut trees and hence most of the recipes include freshly grated coconut. Since this Kheer is also an authentic Goan recipe mostly made during feasts or festivals its main ingredient is Coconut milk.

Sweet Potato is called as Shakarkandi kheer in Hindi, Ratalyachi Kheer in marathi and Kangachi kheer in Konkani which is native language of Goa.
I have used sugar for this recipe but you can replace it with Jaggery or any syrup of your choice.
Sweet potato Kheer|Kangachi kheer| रताळयाची खीर |Vegan Dessert
Sweet potato - 1 cup
Coconut Milk - 1 cup (either canned or from freshly grated coconut)
Sugar - 2 tbsp
Saffron strands - pinch
Cardamom powder/Ilaichi - 1 tsp
Water - 1 cup
Wash Sweet potatoes thoroughly with water to remove dirt, then roughly peel them and cut into 1/2 inch thick circles
Add sweet potatoes and water to a pan
Boil for 5 mins or till sweet potatoes are slightly soft, do not overcook
Lower the flame and add coconut milk and sugar
Mix well and let it boil for another 5 mins so that the mixture thickens
Then add saffron and cardamom powder.
Mix well and immediately switch off the flame
Serve hot or cold
