There are 2 ways you can sprout Moong at home. In both the below cases you have to first soak moong for 6 to 7 hours and then discard the water.
1. Transfer soaked moong to a muslin cloth, tie all the ends to form a pouch, on this pouch place a marble mortal, since its heavier than wooden mortal, or place any other small heavy object from the kitchen. Let it sit overnight, next morning you will see long sprouts.
2. Heat microwave for 5 mins and then switch it off completely. Now transfer soaked moong in to a strainer vessel, cover with a lid and place it in the microwave, leave overnight. Next morning you will see long sprouts.
Basically for legume to sprout, they need warm and dark atmosphere.
I never intended to make this recipe, one day for lunch I was ready to try my hands on goan traditional Moong curry which is called Moogachi Gati. While i was gathering all ingredients, just realized that there was an extra cup of sprouted moong, there was no way i would have wasted it, but was very tired to try another curry based recipe, so thought of making something very quick.
I then combined sprout moong with some veggies, to make it more like an appetizer. Voila!! Outcome was a super healthy salad ready in no time.
I like to consume legumes or sprouts by steaming them a little, so its cooked at the same time its crunchy because my gramdma always believed its the best way your stomach will digest legumes.
For this salad, first steam or boil mung sprout for 2 to 3 mins, this way it will not be overcooked and still retain its crunchiness.

Sprouts Moong - 1 cup (boiled or steamed)
Onion - Finely Chopped
Tomatoes - Finely Chopped
Cucumber - Finely Chopped
Fresh Coriander leaves - Finely Chopped
Mix all the above ingredients ,
A bowl of this salad is rich in Vitamins and Proteins, Enjoy!!
