This salad can replace your entire meal, it might look like an ordinary salad but with baked aubergine and mushroom flavors the taste gets to another level. You just cant do with one serving, you will crave for more :)
Use any vegetables of your choice or seasonal veggies, but the key ingredient is Baked Aubergine and mushrooms, you can increase the quantity as per your taste.
Lets learn how to make this Simple easy Penne Primavera Salad, with boiled Penne or pasta combined with baked aubergine and mushrooms, tomatoes, feta cheese and basil leaves
Baked aubergine and mushroom are used in this recipe, but you can also add veggies of your choice
Pasta should not be overcooked. Hence once you drain pasta run it through cold water, so that the cooking process stops and pasta gets perfectly cooked.
Feta cheese along with baked vegetables enhances the taste of pasta

Penne Primavera Salad - Pasta salad without sauce
Penne or Pasta - 1 cup
Aubergine or Eggplant - 3 or 4 slices
Mushrooms - sliced
Tomato - 1 medium
Basil leaves - 4 to 5 leaves
Feta cheese - 1/2 cup
Italian herbs /seasoning - 1 tbsp
Water for boiling
Cold water - 1 glass
Arrange Aubergine and mushroom slices in a baking tray and brush it with Olive oil and season with salt on both sides
Bake for 20 mins in a preheated oven at 350 F
Once baked, cool completely and then cut baked Aubergine into smaller pieces, as per your choice
In the mean while, boil 3 cups of water, to it add Olive oil and Salt
Once water starts to boil add Penne and cook for 10 mins, till Penne is done
** Should not be too soft, don't overcook Penne
Once cooked, strain Penne to drain out all the water, then add a glass of cold water to stop the cooking process
In a bowl, add the cooked Penne, baked aubergine and mushroom pieces and chopped tomato
Add Italian herbs or seasoning and Salt to taste and 1 tsp Olive Oil
squeeze in half lime to extract its juice, add scrambled Feta cheese and basil leaves
Mix well to combine all of the above
Penne Primavera is ready to serve.
