There are so many ways of storing potatoes, recently i saw a post where you got to place potatoes in a paper bag and storing them in a dark place away from onions, this way they don't sprout, and now im obsessed by this method.
When there are no vegetables in stock I can only think of potatoes and its always in abundance in my kitchen. The other day, I was telling my husband if he ever imagined what potatoes might be thinking, and we had a good laugh over his answer which was "Love me or hate me, but you cannot ignore me!!! " So true. When my husband decides to take over the kitchen, potato is his best friend ;) he is just amazing at making potato recipes.
In India whenever my family is travelling to holy places we try not to eat Onion and garlic based food till our worship rituals are completed, its a tradition we have always been following and during such visits I love packing this recipe. This is one of those common recipes which is on the menu of every restaurant or roadside dhabas, so doesn't really matter even if I don't pack meals on long travel .
Jeera Aloo is made with boiled potatoes flavored with cumin seeds and seasoned with other spices. Since this recipe does not contain Onion and garlic its also consumed during fasting period and can be included in vrat recipe list. An easy, simple and quick to make recipe, yet delicious served with puris, rotis, phulka or chapati (any indian flatbread), as a side dish.

Jeera Aloo Restaurant style | Quick Potato dry recipe without Onion and Garlic | Vegan Recipe
Potatoes - boiled - 3 medium
Jeera/Cumin seeds - 1 tbsp
Curry leaves - 10-12
Asafoetida/ Hing - 1/2 tsp
Ginger/Greenchilly crushed - 1 tbsp
Turmeric powder / Haldi - 1/2 tsp
Amchur powder / Dry Mango powder - 1/2 tsp
Fresh coriander leaves - chopped
Oil - 1 tbsp
Boil potatoes, then peel and cut them into cubes.
In a pan heat oil, then add cumin seeds
once they splutter add curry leaves, hing and also add crushed green chilly and ginger
Saute for a minute
Then add turmeric powder n mix well
Add boiled potato cubes, amchur powder and Salt to taste
Mix well and saute for 2 to 3 mins
Check for seasoning
Garnish with fresh coriander
Serve hot with rotis, puri or chappati
**You can replace amchur powder with Lime juice
