There are a lot of recipes with Beet, it can be consumed raw or cooked. Beetroot has anti-cancerous properties and helps in detoxification with many other properties. Along with health benefits I love the deep red color it has, but I have also had tricky situations.
Beet can be tricky when it comes to gravy based curries since the color empowers all other vegetables used. I still remember making Mix veg curry for the first time. I added all vegetables in a steamer, after 20 mins I see that my boiled potatoes and other vegetables all had a tint of red color. Since then I always boil or steam Beetroot separately than other vegetables.
This recipe has very few ingredients and can be made easily, its not a time consuming dish. I have used boiled Beetroot and yogurt with seasoning. You can use any seasoning of your choice. Tadka in Oil with mustard seeds and curry leaves can also be added, but I just like this plain salad which is more of on the go recipe.

Yogurt based Beet Salad - 2 ingredients recipe
Yogurt/Curd - 1 cup
Salt - to taste
Sugar - pinch
Boil or Steam Beetroot
Once boiled, let it cool down completely
Peel the beetroot and chop it finely
Add chopped beetroot to a bowl
Then add thick curd, salt to taste and pinch of sugar
You can exclude sugar if needed, I use it to cut off the sour taste of curd
Mix well to combine beet and yogurt
